Ingredients

  • 1 frozen banana
  • 4 ice cubes
  • 1 scoop Rootz Protein Powder
  • 1 tbsp dark cocoa powder
  • 1 tbsp ground flax seeds
  • ¼ cup unsweetened cashew milk
  • Toppings:

  • buckwheat
  • coconut flakes
  • cacao nibs
  • 4 strawberries, sliced
  •  

     

Directions

  1. Add all your ingredients except for the toppings to a high-powered blender and blend until smooth and thick.
  2. Pour into a bowl and add your toppings. Enjoy!

What is this, Bailey? Yet another breakfast recipe?!

YOU BETTER BELIEVE IT PEOPLE!

Or I guess it could be an anytime snack or dessert too, but I usually eat it for breakfast.

I will forever and ever post all the breakfast recipes because there’s just an endless amount of delicious options and I want you all to be able to share in that deliciousness! So here I bring to you the refined-sugar free goodness that is chia seed pudding topped with scrumptious homemade (and easssssyyyyy as can be to make) strawberry chia jam plus a lil extra toppings, obviously.

Holllaaaaaaaaaa!

I love chia seed pudding and I love jam even more, but PSA: most store-bought chia seed pudding and jam is LOADED with added sugars and additives which can be detrimental to your gut. Not to mention, refined sugar actually tricks your brain into thinking you’re still hungry long past the point of fullness. No bueno. It also kills the good bacteria in your gut which you need for proper digestion and to keep you feeling your best!

So moral of the story here is: when it’s at all possible, you should make your own versions of your favorite store-bought goodies so you know EXACTLY what’s going in what you’re putting in your bodies. Remember, you only have one body and you gotta feed it properly so it lasts as long as possible! Oh, and also you should make this Strawberry Chia Seed Pudding because it’s da bombbbbbb.

Refined-Sugar Free Strawberry Chia Seed Pudding

Ingredients

Directions

  1. In a mason jar or Tupperware container, combine all ingredients for the chia seed pudding and mix thoroughly. I usually put the lid on and shake to mix!
  2. Place the chia seed pudding mixture in the fridge for 3-4 hours or overnight to thicken up.
  3. Once your chia seed pudding is thick, pour half into a bowl or jar and then layer on half of the strawberry jam. Sprinkle on your toppings and enjoy!

Ok guys. You all know my extreme breakfast addiction is so real, and sometimes I just absolutely cannot decide what I want to eat! There’s so many good options when it comes to breakfast. I mean there’s pancakes, waffles, oatmeal, eggs, chia seed pudding, smoothie bowls, banana bread, muffins, need I continue?

Well I decided I’d take it upon myself to combine some of my favorite breakfast things into one triple layered breakfast bowl so now I don’t have to decide! I can just have everything I want in one bowl!

GENIUS!!!!!

Yes, yes I know, I’m a breakfast innovator. How have I not been discovered and recognized for my absolute breakfast brilliance yet? I’m not sure either.

Anddddd this recipe is SO SIMPLE. All you need to do is a little meal prep the night before to get your chia seed pudding going and then BOOM you just need to wake up and devour the beautiful bowl of nutritious deliciousness.

This bowl has exactly what you need to start your day off right with omega-3’s, LOADS of vitamins and minerals, fiber, and so much more! You’ll have so much energy from all the natural plant-based ingredients that you’ll be a whole new you. Now if that ain’t something to woo about then I don’t know what is! WOOOOOO!!!!! (Can you tell I just ate this bowl?)

Triple Layered Strawberry Pitaya Chia Breakfast Smoothie Bowl

  • Servings: 2 bowls

Ingredients

    Chia Seed Pudding

  • 1 cup unsweetened cashew milk
  • 1 Tbsp maple syrup
  • 3 Tbsp chia seeds
  • ¼ tsp vanilla extract
  • Strawberry Pitaya Smoothie

  • ½ frozen banana
  • ¼ cup frozen cauliflower
  • ½ cup frozen strawberries
  • 1 Tbsp freeze dried pitaya powder (I use Hybrid Herbs)
  • ¼ cup unsweetened cashew milk
  • a drizzle of honey
  • Strawberry layer

  • ¼ cup Bites By Bai’s 3-Ingredient Refined-Sugar Free Strawberry Chia Jam (or your favorite strawberry jam)
  • Toppings

  • fresh fruit
  • your favorite granola (I am using Oh She Glow’s Mocha Empower Glow Bars crumbled up)
  • a drizzle of raw honey

Directions

  1. In a mason jar or Tupperware container, combine all ingredients for the chia seed pudding and mix thoroughly. I usually put the lid on and shake to mix!
  2. Place the chia seed pudding mixture in the fridge for 3-4 hours or overnight to thicken up.
  3. Once your chia seed pudding is thick, you can make the smoothie layer by placing all ingredients for the smoothie in a high-powered blender. Blend until thick and creamy.
  4. Place half of the strawberry jam in the bottom of each bowl followed by half the chia seed pudding and then half the smoothie bowl. Top with fresh fruit, granola, and honey. Enjoy!

Anyone out there love a good jam? (Everyone should be raising their hands cuz it’s impossible not to love jam, amiright or am I right?) WELL THEN do I have the recipe for you!!!!

Last week I happened to purchase a very large container full of strawberries that was marked down to 30% off because no matter how hard I try, I can’t ever resist a good sale. Who could possibly eat a giant container of strawberries in a day? Not me. But did I still buy it knowing full well it would be impossible to eat them all before they went bad? You bet I did. Can’t stop won’t stop.

So now I was in a bit of a conundrum. I have all these strawberries. Now what? What could I possibly do with all of them. And then I made some oatmeal and I knew what to do. I love a good PB&J inspired anything so what could be tastier than PB&J oats with homemade strawberry chia seed jam? Mmmmm-mmmmm delicious. I love jam but I always struggle to find a good jam that isn’t super processed or loaded with added sugars. So if I made my own jam I could control exactly what’s going into it and therefore know exactly what I’m putting into my body.

Aaaaaand, the best part about this recipe is you only need 3 ingredients (plus water), one pot, and 10 minutes! Seriously, could not be easier. And oh man is it tasty. There are very few things on this earth that top fresh, sticky, warm homemade jam.

So next time you can’t resist a sale and happen to buy a very large quantity of berries on hand, you’ll know exactly what to do. TIME TO JAM.

3-Ingredient Refined-Sugar Free Strawberry Chia Jam

  • Servings: 1 cup
  • Difficulty: easy

Ingredients

  • 1 heaping cup of chopped fresh strawberries
  • 2 Tbsp chia seeds
  • 1 Tbsp maple syrup, honey, or other sweetener of choice
  • 1 Tbsp water

Directions

  1. Heat a small pot over medium-low heat. Add all ingredients and cook, stirring occasionally for about 7-10 minutes until your strawberries have broken down and you have a sticky, jam-like consistency.
  2. Remove from heat and allow to cool. Store in an air-tight container for up to a week.


5-Minute Creamy Coconut Strawberry Oats

And that’s all I got. But I’m not kidding, these oats? OOOH BABY do I love their way! I just cannot get enough. Ever.

Are you a fellow oat lover too? (I’m assuming yes by the fact that you’re reading this post about oats). Oh goodie, we’re all on the same page here (literally). What could be better than a sweet, creamy, warm bowl of ooey-gooey oats to fill you up and keep you going on your longest of days? Okay, so maybe like a puppy BUT BASICALLY NOTHING. You can’t beat a puppy, like come on people.

And these oats come together in literally a snap of the fingers! Do you have 5 minutes? Then you’ve got time to make these. We all know oats are a fantastic way to start the day because they are high in carbs, iron, fiber, and protein (and more) and they are a slow burning energy source so that energy lasts all day and you feel fuller longer BUUUUTTTT pair those oats with coconut and they turn into….

MEGA OATS!!!!!

Boom. On top of all the fantastic benefits of oats on their own, the addition of coconut to the party adds powerful amino acids and protein, more iron and fiber, and a bunch of folate and potassium! Your digestive system is going to be flying high after this, I promise you.

5-Minute Creamy Coconut Strawberry Oats

  • Servings: 1
  • Difficulty: easy

Ingredients

  • 1 cup water
  • ½ cup gluten-free rolled oats
  • ½ tsp coconut extract
  • 1-2 Tbsp Silk Unsweetened Coconut Milk
  • ½ Tbsp maple syrup
  • 1 Tbsp plus a little extra unsweetened shredded coconut
  • 3 chopped organic strawberries

Directions

  1. Bring 1 cup of water to a boil in a small pot.
  2. Add the oats to the boiling water, reduce heat to medium, and cook while stirring occasionally until the oats have absorbed the water and are fully cooked and creamy.
  3. Remove oats to a bowl and stir in the coconut extract, coconut milk (to your desired consistency), maple syrup, and 1 Tbsp shredded coconut.
  4. Top with your strawberries and remaining shredded coconut. Enjoy!
