The EASIEST Banana Chocolate Chip Mug Cake

Anyone out there ever struggle to come up with quick, healthy, satisfying dessert options on the fly? You know, it’s after dinner and you’re just craaaaving something to make that ever so annoying sweet tooth stop complaining, but you don’t wanna put in much effort and you don’t wanna throw away a day of good eating and maybe a good workout. Well guess what.

I GOTCHU.

This mug cake, you guys. Let me tell you. It’s a game changer. All you need are 7 ingredients that you for sure have lying around the house, a mug, a microwave, 3 minutes, and a fork. Or your fingers. Whatever floats your boat.

The EASIEST Banana Chocolate Chip Mug Cake

Ingredients

  • ½ mashed ripe banana
  • 1 small egg
  • 1 tbsp raw honey
  • ¼ tsp vanilla extract
  • ¼ cup organic whole wheat flour (adjust accordingly so batter isn’t too dry)
  • ½ tsp baking powder
  • 2 tbsp dark chocolate chips

Directions

  1. In a mug, mash your banana with a fork then add the egg, honey, and vanilla extract and mix thoroughly with your fork.
  2. Add the remaining ingredients and combine until a nice, thick but smooth batter forms.
  3. Microwave for 45 seconds and remove to check done-ness. You’re looking for a firm, cake-like top that springs back into place when you press it. If it hasn’t reached this point yet, keep microwaving in 15—20 second increments until done (microwave times vary so much depending on mug size and microwave power).
  4. Remove and let cool for a couple minutes then enjoy!

Immunity Boosting Orange Turmeric Tonic

It’s that time of year again, the time of the sicklings. Well, I guess the second time of year for Edmonton because the first time everyone is sick is when it starts getting cold and now we’re getting the second wave of sickness because it’s been months and, you guessed it, IT’S STILL SO COLD.

Now I haven’t gotten sick yet, (probably just jinxed myself) but everyone surrounding me has been sick for weeks so I’m feeling either invincible or like I’m going to be sick any second now. BUT I snagged a giant bag of oranges for 50% off at the grocery store this morning so I’ve decided to fight as hard as I can against the sickness. Vitamin C power, baby.

I keep up with my foodie trends and I’ve noticed that tonics have been on the rise lately, so what better to make with my vitamin packed oranges than an immunity boosting tonic?

Side note here – what even is a tonic? I’ve always heard the word and just kind of gone along with it, but what sets a tonic apart from your average joe drink? I’m googling it. OK according to dictionary.com, a tonic is described as, “a medicine that invigorates or strengthens.” Ahhhh, so does that mean a gin & tonic will heal me? Hehe I’m all for that! JK I don’t think that’s the same kind of tonic (which confuses me). So tonics are all powerful healing drinks, boo-yah.

So what makes this guy a tonic, you ask? Have a seat, my friend, I gotcha. Let’s just list the ingredients here:

  • Fresh Orange Juice: B and C vitamins to seriously boost that immune system and energy levels.
  • Fresh Lemon Juice: also a great source of vitamin C and promotes hydration.
  • Turmeric Root: contains a powerful compound called curcumin which is a natural anti-inflammatory and source of anti-oxidants. The anti-inflammatory properties in circumin play a huge role in the inflammatory pathway in the body, helping to fight off chronic illness (which is why it’s so great in this tonic).
  • Ginger Root: contains gingerol which is also a powerful source of anti-oxidants and has anti-inflammatory qualities. Ginger has been shown to reduce nausea and indigestion, boost your immune system, and relieve muscle pain and soreness, just to name a few key benefits.
