The Bread-less Breakfast BLT

Ok so I absolutely DIE for a good BLT, but as I get older I find that the more bread I eat, the less my joints work. Sounds weird, but I’m telling you every time I eat bread I ache in my knees and all the places where I’ve broken bones.

So naturally, like I do with most things that don’t make me feel great, I decided to do something about it and create a BREAD-LESS breakfast BLT that’s just as amazing and delicious and easy but doesn’t make me feel like a 100 year old woman.

And the best part about this is it’s so freakin easy to make! You don’t even need to eat it as a sandwich. Chop up those tomatoes and eat it as a breakfast bowl! The deliciousness is endless. So next time you’re craving a BLT and have 10 minutes to spare, make this bad boy. You’ll thank me later.

The Bread-less Breakfast BLT

  • Servings: 2 BLTs

Ingredients

  • 1 beefsteak tomato, sliced into about 1/2 inch slices
  • 2 large organic free-range eggs
  • 2 slices bacon, cut into smaller pieces
  • 1/2 avocado, sliced
  • salt and pepper to taste

Directions

  1. Heat a pan over medium heat. Once hot, add your bacon and cook, flipping occasionally, until crispy.
  2. Remove the bacon pieces to a paper towel and add the eggs to the same pan with bacon grease. Scramble the eggs and stir occasionally until the eggs are cooked.
  3. Layer your eggs, bacon, and avocado onto your tomato “buns,” season with salt and pepper, and enjoy!

Pumpkin Spice Smoothie Bowl

Okay so as soon as October hit this year I got way too excited about pumpkin spice. Literally you guys I made pumpkin spice EVERYTHING. Every day there was something new.

So I have been eating this unreal pumpkin spice smoothie bowl basically every day and I just now realized I forgot to post the recipe for it because I didn’t want to overload you guys with all my pumpkin spice recipes.

Pumpkin Spice Smoothie Bowl

  • Servings: 1

Ingredients

    Bowl:

  • ½ cup frozen pumpkin puree
  • 1 frozen banana
  • 1 Tbsp maple syrup
  • ¼ tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ¼ – ½ cup unsweetened coconut milk
  • Toppings Options:

  • fresh sliced banana
  • pecans
  • pumpkin seeds
  • dried white mulberries
  • unsweetened shredded coconut flakes
  • chia seeds
  • almond butter

Directions

  1. In a high-powered blender, add all your ingredients for the smoothie bowl and blend until smooth and thick.
  2. Transfer to a bowl and top with whatever toppings you would like. I always go for all the toppings because I’m a toppings queen.


Dairy, Gluten, and Refined Sugar Free Bananas Foster Waffles with Caramel Drizzle

I knew 100% as SOON as I saw Rachel’s Good Eat’s 5-Ingredient Healthy Salted Caramel Sauce what I would be putting under it. I had some bananas foster french toast with caramel drizzle once and ever since I’ve been hooked on the combo.

BUT. My only issue with this addicting combo? Yeah, good luck trying to find a dairy and refined sugar free caramel sauce – until now. So now I’m afraid all my inner caramel-drizzled obsessions will be coming out, so stay tuned for much, much more. But for now, you’re just gonna have to settle for these spectacular dairy, gluten, and refined sugar free bananas foster caramel waffles.

Dairy, Gluten, and Refined Sugar Free Bananas Foster Oats with Caramel Drizzle

Ingredients

Directions

  1. Pre-heat your waffle iron and rub down with coconut oil if not non-stick already.
  2. In a bowl, combine your oat flour, baking powder, ½ tsp cinnamon, and pinch of salt.
  3. In a separate bowl, whisk together your eggs, cashew milk, 1 Tbsp MCT oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Add your mix to the waffle iron and let cook for about 1-3 minutes depending on your waffle iron size and shape. I used a small square waffle iron and the recipe made four waffles and took about 2 minutes to cook.
  6. Meanwhile, heat a small pan over medium-low heat and add the remaining MCT oil.
  7. Once the oil is hot, add the sliced bananas and cinnamon and fry for about 1-2 minutes on each side.
  8. Serve the waffles topped with the fried bananas, walnuts, and Rachel’s Good Eat’s caramel drizzle. Enjoy!

Except with these pancakes in your belly it very much will be a happy Monday! These pancakes are one of my favorite go-to recipes during weeks where I know I’ll  be super busy and will need quick breakfast options becauseeeeee what you can do is whip up a big batch of these guys on Sunday and throw ’em in the fridge and then whenever you want one (or one fat stack) you just throw ’em in the toaster and viola! Instant mouthwatering-ly tasty healthy pancakes! No more need for frozen toaster pancakes or waffles that are full of junk ingredients like sugars and preservatives. You really can’t beat that.

ALSO. These sneaky little devils have all the health benefits of any breakfast you could ever dream up.

  1. You’ve got your oats in there which are a whole grain, healthy source of carbs that are rich in fiber, antioxidants, vitamins, minerals, protein, and so many other nutrients AKA they are going to give you loads of sustainable energy all day long (and also keep you feeling fuller longer so you don’t have to resort to a mid-morning snack).
  2.  You’ve got your bananas which contain loads of potassium AKA a powerful electrolyte which helps maintain the balance between acids and bases in the body and is KEY in maintaining healthy muscles and bones as well as fighting fatigue and regulating your blood pressure.
  3. Egg whites. Egg whites are just incredible. They contain TONS of protein while being super low in calories, fat, and cholesterol PLUS they’re loaded with a bajillion crucial vitamins and minerals essential to healthy living.
  4. Last but not least, we’ve got some cinnamon in there. Cinnamon is one of my favorite spices because besides adding a unique sweet-spicy flavor to whatever you put it in, it’s packed with antioxidants which help fight off damage caused by free radicals and it’s great for fighting inflammation.

Easy 7-Ingredient Flourless Banana Pancakes

  • Servings: 10 Pancakes
  • Difficulty: easy

Ingredients

  • 2 ripe bananas
  • ¾ cup organic free-range egg whites
  • 1 tsp vanilla extract
  • 1 ½ cup gluten-free oat flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • pinch sea salt
  • Maple syrup and fresh fruit to add on top (I personally LOVE strawberries with this recipe)

Directions

  1. Add all ingredients except for the maple syrup and fresh fruit to a blender and blend until everything is just combined.
  2. Meanwhile, heat up a non-stick griddle over medium heat.
  3. Pour your batter on to the griddle in about 1/3 – ½ cup sized amounts.
  4. Cook each pancake until the top looks bubbly and firm. Flip and cook for about 45 more seconds on the other side, or until you feel the pancakes is cooked throughout.
  5. Remove from the griddle and top with maple syrup and fresh fruit. Enjoy!
  6. * You can store these pancakes in the fridge for up to 5 days or the freezer for 3 months and then just pop one in the toaster whenever you want it!



5-Minute Creamy Coconut Strawberry Oats

Are you a fellow oat lover too? (I’m assuming yes by the fact that you’re reading this post about oats). Oh goodie, we’re all on the same page here (literally). What could be better than a sweet, creamy, warm bowl of ooey-gooey oats to fill you up and keep you going on your longest of days? Okay, so maybe like a puppy BUT BASICALLY NOTHING. You can’t beat a puppy, like come on people.

And these oats come together in literally a snap of the fingers! Do you have 5 minutes? Then you’ve got time to make these. We all know oats are a fantastic way to start the day because they are high in carbs, iron, fiber, and protein (and more) and they are a slow burning energy source so that energy lasts all day and you feel fuller longer BUUUUTTTT pair those oats with coconut and they turn into….

MEGA OATS!!!!!

Boom. On top of all the fantastic benefits of oats on their own, the addition of coconut to the party adds powerful amino acids and protein, more iron and fiber, and a bunch of folate and potassium! Your digestive system is going to be flying high after this, I promise you.

5-Minute Creamy Coconut Strawberry Oats

  • Servings: 1

Ingredients

  • 1 cup water
  • ½ cup gluten-free rolled oats
  • ½ tsp coconut extract
  • 1-2 Tbsp Silk Unsweetened Coconut Milk
  • ½ Tbsp maple syrup
  • 1 Tbsp plus a little extra unsweetened shredded coconut
  • 3 chopped organic strawberries

Directions

  1. Bring 1 cup of water to a boil in a small pot.
  2. Add the oats to the boiling water, reduce heat to medium, and cook while stirring occasionally until the oats have absorbed the water and are fully cooked and creamy.
  3. Remove oats to a bowl and stir in the coconut extract, coconut milk (to your desired consistency), maple syrup, and 1 Tbsp shredded coconut.
  4. Top with your strawberries and remaining shredded coconut. Enjoy!
