Healing Golden Turmeric Latte

Wow it’s currently -15 and dropping, so basically it was nearly impossible to get out of bed this morning. Thankfully, I am now sipping on this magical turmeric latte and have warmed up enough to tell you about it.

I recently discovered something called VIOME which is this super cool gut microbiome (aka all your bacteria that make up your gut) test where you send in a stool sample and they will analyze it and report back your SPECIFIC gut microbiome data and personalized food/diet recommendations that will promote optimal gut functioning and therefore optimal you functioning. Healing Golden Turmeric Latte

Ingredients

  • 1 cup unsweetened coconut milk
  • 1 cup fresh brewed coffee (decaf works too)
  • ½ tsp vanilla extract
  • 2 medjool dates, pitted
  • appx. 1 inch nub of fresh turmeric
  • ½ tsp pumpkin pie spice
  • ½ Tbsp MCT oil (or virgin coconut oil)
  • pinch of black pepper
  •  

Directions

  1. Add all ingredients to a blender and blend until smooth.
  2. Pour blender contents into a pot and heat over medium heat while stirring occasionally until the desired serving temperature has been reached. Enjoy!

K. So I visited my family back in Arizona last week and I was  honestly having Vitamix withdrawals because of the lack of blender power I had in AZ. Apparently once you go Vitamix, you never go back because woweeee did I miss that thing. Thankfully there are a million and one places in Scottsdale to get smoothies bowls or I would have had an absolute fit without them for a WHOLE WEEK.

Anyways, I’ve now been reunited with my precious Vitamix and am happily back to my smoothie bowl ways. So the other day I was at the store and I thought, “Ya know what Bailey? You’re pretty great. You deserve some self love today so you go ahead and TREAT YOSELF.” So what exactly did that mean? Buying some frozen acai packets, DUHHHH. And I just so happened to snag the last pack of unsweetened Sambazon frozen Acai so it must have been fate. Okay so it’s not exactly an unhealthy treat yoself moment, but sometimes acai packets can be a little pricey so I try to limit myself to only the occasional acai bowl which makes it that much more special when I do treat myself to it.

Thus came this spectacular creation. Acai. Strawberry. Banana. Coconut water. Honey. All the toppings. Add that to a warm, sunny day lounging out on the patio and you’ve got yourself one heavenly day right there.

Gonna side track from that dream here for a sec. I’m sure many of you all have probably heard of acai, but how many of you actually know what it is? Don’t know? Don’t worry, I gotchu! So acai is actually a tiny little purple-y berry which comes from certain palm trees in South America. Okay so it’s a berry, so what? Why is it so much more special that we can only buy it in frozen packets in many areas of the world? Well that would be because these lil babies are HEALTHY AF. Like wow, so much health in such a tiny little berry. It’s overwhelming really. Talk about a superfood. Let me just list SOME of the health benefits for ya because I would lose you if I went through them all.

  1. Acai berries are super high in anthocyanins (like red wine) which are a type of antioxidant that helps to balance cholesterol levels and promote a healthy heart.
  2. These anthocyanins as well as high levels of polyphenols in acai berries have also been shown to help stop bad cell proliferation which means they prevent bad cells from growing out of control.
  3. Consuming acai has been shown to reduce total body fat, skin folds, and insulin sensitivity.

Green(ish) St. Patty’s Day Matcha Pancakes

Fun fact: I’m a ridiculous holiday person. Like, I consistently make a fool out of myself to celebrate most holidays. HOWEVER, St. Patrick’s day has never really been my thang. I’m not sure why, it just never really resonated with me I guess. Maybe because I’m not a big drinker. But this year, I’ve decided to switch things up.

There is one thing I’ve always had in common with St. Patrick’s day, and that is a love for the color green. The best of all the colors, if you ask me (Bailey you weirdo). So what’s a healthy foodie who loves the color green to do on St. Patrick’s day to celebrate?

MAKE GREEN PANCAKES OF COURSE! (Well, they have a green-ish tint.)

Brilliant!!!! But how? What could I use to naturally color pancakes green?

Ahh yes, matcha. How convenient that I just got into the delicious green drink so I have some matcha powder on hand. Let me give you a lil matcha backstory so you can begin your matcha obsession as well.

Matcha is actually the powdered version of green tea leaves, so when you drink matcha (or consume the powder in other ways, like in pancakes) you are actually consuming the entire tea leaf as opposed to when you drink regular green tea where you’re just consuming the leaf-infused water. So why’s that matter? WELL, let me tell you.

When you discard the green tea leaves, you’re in turn discarding tons of antioxidants that you could be drinking in! Matcha is FULL of like a bajillion antioxidants to help the body fight aging and chronic diseases. One particular antioxidant which is found in matcha is EGCG, which stimulates thermogenesis (when fat in the body is burned to produce energy). OKAY score.

But while you may be convinced to try matcha already at this point, there’s still so much more to gain from it! Matcha also:

  • is a natural detoxifying agent
  • relaxes the mind and body
  • contains chlorophyll and vitamins
  • boosts your mood and concentration

SO, if you weren’t convinced before, I bet I’ve got you to hop on the matcha train now!!! And if not, you probably shouldn’t be following my blog because you clearly don’t care about your body (ooh, harsh). But anyways, I’ve gotten off topic.

And they’re healthy!!! Time to get festive and put fun colorful nutrients in yo body instead of fun colorful beer! Or, at least before you put the fun colorful beer in. Happy St. Patty’s Day, my peeps.

Green St. Patty’s Day Matcha Pancakes

  • Servings: 5 pancakes
  • Difficulty: easy

Ingredients

  • 3 Tbsp Matcha Ninja powder
  • ½ cup oat flour
  • 3 Tbsp coconut flour
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • Pinch salt
  • 1 Tbsp date sugar
  • 2 eggs
  • ¼ cup Silk Unsweetened Coconut Milk
  • ½ tsp vanilla extract
  • ¼ tsp coconut extract
  • Coconut oil to grease griddle
  • Fresh coconut and maple syrup for toppings

Directions

  1. Heat a griddle to medium heat and grease with coconut oil.
  2. In a large bowl, combine matcha powder, oat flour, coconut flour, cinnamon, baking powder, salt, and date sugar. Whisk to combine all ingredients and then make a well in the center.
  3. In a separate bowl, combine eggs, coconut milk, vanilla extract, and coconut extract.
  4. Add your wet ingredients to the well in your dry ingredients and mix until just combined.
  5. Pour about 1/3 cup batter onto the griddle to form each pancake until all the batter has been used up.
  6. Cook until you begin to see bubbles on top (about 2 minutes) and then flip and cook for another 1-2 minutes until cooked through.
  7. Serve topped with maple syrup and fresh coconut.


Sippable Healing Bone Broth

What.

The heck.

Is that.

I’m not sure what it is about the words “bone” and “broth” put together that make it sound like you’re having some creepy Halloween blood/bone concoction of ickiness, but the first time I heard that bone broth is something I should be consuming, I was like um, excuse me?

BUT. Contrary to how it sounds, bone broth is simply just bones simmered for an extended period of time in order to extract the flavor and health benefits from them.  And in this case, the health benefits are endless.

*One thing I do want to mention real quick here is to just make sure your bones are from a grass-fed/free-range animal. I prefer grass-fed beef bones or free-range chicken bones just to ensure I’m getting the healthiest broth I can, because after all you’re literally going to be drinking the extracts of that animal’s bones.*

Okay, so these benefits I keep speaking of! Bone broth is one of the best sources of collagen you can obtain naturally. Collagen is a protein found in most connective tissues  in the body, and over time we begin to lose that collagen. Bone broth offers a solution in that you’re intaking readily absorbable collagen right into your body!

But that isn’t the only thing it’s good for. It’s also INCREDIBLE for your gut health. Bone broth has tons of gelatin, which has been proven to restore your gut lining’s strength and even helps resist certain food intolerances. It also helps repair leaky gut, which is when tiny food particles that haven’t been digested seep out of the intestinal lining and into the bloodstream where the immune system then recognizes the foreign particles and becomes active. This causes unnecessary inflammation in the body and can even lead to autoimmune disorders. Since bone broth repairs the gut lining and supports a healthy inflammation response, it can seriously benefit those who suffer from leaky gut by healing the lining where food particles could possibly leak out from. Woop woop!

Now this broth can be taken further to make soups out of, but on a cold day sometimes it’s nice to just sip some out of a mug, like a hot tea. This is actually a real thing, ya know. I’m not just making it up. In New York (and probably other places too, but I’ve read articles about how trendy these cafes are in New York) they have entire cafes dedicated entirely to sippable bone broths! So you don’t have to just take my word for it, trust the people of New York’s taste buds, they know what’s up. So go get yourself some bones and start healing yourself right now!

Sippable Healing Bone Broth

  • Servings: 1 large soup pot full
  • Difficulty: easy

Ingredients

  • 1-2 pounds grass-fed beef soup bones
  • 1 head garlic, cut in half crosswise
  • 1 brown onion, quartered
  • Appx. 24 Liters filtered water (however much your soup pot holds)
  • 4 sprigs thyme
  • 1 Tbsp Extra Virgin Olive Oil
  • 2 sprigs rosemary
  • Salt and pepper to taste

Directions

  1. Pre-heat oven to 400 degrees F. place your bones, garlic, and onion on a lined baking sheet and drizzle with EVOO. Cook in the oven for about 30 minutes, until bones are fully cooked.
  2. Remove from the oven and place in your soup pot with thyme, rosemary, and some salt and pepper. Fill the rest of the pot to about 1 inch below the brim with filtered water.
  3. Bring to a boil, then lower heat to a low simmer and cover. Simmer for 24-48 hours while checking every so often to make sure the water level doesn’t get too low. If your water level is decreasing, add in some more filtered water as needed.
  4. * Broth will keep for about a week in the fridge so I like to refrigerate what I’ll use for the week and freeze the rest in small portions!


Carob Collagen Brownie Balls

When I first heard about collagen powder, I remember being so unbelievably excited about it. And then I saw the price and I was like hold up a second here, let’s do some research first.

K collagen. Let’s think back to that bio degree we slaved to get. Collagen is a key contributor to the elasticity of cells, so perhaps we’re going to see some anti-aging effects here? Maybe a few less wrinkles? Hmmmm…

While there are many claims that ingesting collagen peptides will improve your wrinkles and make your skin more youthful-looking, that may not entirely be true. Because Collagen peptides are amino acids, they will be broken down when they’re digested and sent to wherever those amino acid chains are needed in the body. Since collagen is a key contributor to all cells, not just skin cells, if you are collagen-deficient somewhere other than your skin that takes priority, the collagen will go there. For example, if your heart muscle is lacking collagen, heart > skin therefore the heart will get it. If your skin is deficient, however, it’s likely you will get collagen going to your skin!

So here’s my big picture takeaway that I got from my collagen peptide research: the trend is new and there isn’t a ton of long term scientific evidence supporting or denying the claims being made. Sure, you may get glowing skin, less wrinkles, healthy joints, strong bones and tendons, improved digestive health, and the list just goes on and on, but you also may not get all of the benefits claimed. For me personally, I like ingesting collagen peptides after a hard workout because I believe my muscle tissues will be in need of some repairing ASAP which the collagen will assist with, and I believe that if there is a slight chance to get those lovely health benefits I listed, I’m going to take that chance.

Whatever the research says or the reason you take collagen peptides, there is one indisputable fact here, however, and that’s that these carob collagen brownie balls are TO DIE FOR PEOPLE!!!!! So here’s the recipe, enjoy it my lovely health nuts.

  • Servings: 8 balls

Directions

  1. Combine all ingredients except for the shredded coconut in a high-powered blender or food processor and blend until well combined.
  2. Remove in approximately tablespoon sized balls and roll in shredded coconut.
  3. Store in the refrigerator for up to a week but serve at room temperature.
